The craft beer boom has seen all sorts of innovation in the brewing industry, but this might be one of the most unusual creations yet.
Modist Brewing, based in the Minneapolis North Loop, has teamed up with its neighbors at Rise Bagel Co. to make beer out of bagels.
Over the past month, Modist says it's collected about 150 pounds of bagels unsold by the bakery and coffee shop.
It has ground the bagels into a flour that formed the malt bull of its new beer creation, called "No Bagel Wasted."
