One local kitchen team is bringing a Prince-themed pop-up dinner to Loring Park restaurant, The Bird.
According to Bring Me The News, the Chelle's Kitchen team is preparing a four-course event at The Bird on June 7 in celebration of the Purple One's 61st birthday.
Lachelle Cunningham, who now runs her own catering business, crafted the four-course vegan menu featuring purple foods:
- Appetizer: lentil taquitos with roasted tomatillo and poblano salsa verde & purple yam crema.
- Salad: seasonal summer salad with roasted edamame & almonds with blueberry vinaigrette.
- Entree: pulled grilled purple cauliflower OR smoked tandoori chicken with curry perloo rice & vegetables & vegan cilantro cream sauce.
- Dessert: purple yam cobbler, harissa roasted pecans with vegan whipped cream.
A percentage of proceeds will benefit an "aspiring black culinary professional," according to the event page.
