A Minneapolis food truck that opened its first brick-and-mortar store in Northeast is now expanding to Stillwater.
Minnesota Nice Cream opened its doors at 308 Chestnut Street East on Saturday, with the intention it will be open Friday to Sunday every weekend until Memorial Day.
It sounds like there was a last-minute scramble to get the Stillwater shop open in time, with the ice creamery noting on Instagram that as of Friday night "opening ... seemed near impossible" but managed it thanks to "3 hours of sleep, a great support team, and a heylll of a lot of luck."
